Mutarotation: a sugar that spontaneously changes from sweet to bitter

Simple sugars can exist in multiple molecular conformations, some of which have different tastes and optical properties.

My crystals were almost entirely the sweet form, but it is possible that your bag may have the bitter-tasting form to begin with.

D-glucose, also known as dextrose, also known as "corn sugar", can be found on Amazon, or beer homebrewing stores.

  1. This video is amazing, as always! It shines (pun intended) some information on a topic I learned in Uni but never experimented firsthand. Thanks for the video :)

On another note, have you ever thought of making a video on synthetic gemstones for lasers? I recently fell in a rabbithole around scintillators and synthetics cristals that I find amazing and nobody on youtube ever made a video on the topic. I feel that it is right in your alley. Maybe even a collab with someone like NileRed, who recently purchased an arc fusor to make amorphous metal? My 2 pences.
Keep up with the amazing work!
